What can I do when my chocolate hardens while melting?

It is called seizing when chocolate turns thick and stiff while melting. Seizing occurs because of the following reasons:

- Chocolate is burned. - Keep the heat low and keep stirring while melting the chocolate.

- Moisture has been added to your batch of chocolate. Chocolate is very sensitive particularly with liquids. Be sure to wipe out your spoon and other utensils before using.

For urgent situation like this, you can mix 1 tablespoon of solid vegetable shortening for every 6 ounces (equivalent to 1 c. baking chips ) while melting your chocolate.

However, when your chocolate seize up you will not be able to use it for tempering since it is cannot be regarded as pure. But do not throw it out; you can still use it for baking or making chocolate sauce.
