What is dutch cocoa?

Dutch processed cocoa is also known as
'alkalized' cocoa powder. It has been treated
with alkali during processing to neutralize
its acids therefore producing a mild flavor.
Since it is neutral, it does not respond with
baking soda.
Dutch cocoa can be easily dissolved in
liquids. It is great in cakes and other
pastries because of its subtle flavor that
balances well with the rest of the ingredients.
Here are some of well-liked brands of
Dutch Cocoa: Lindt, Poulian, Droste, Valrhona
and Pernigotti.
