What kind of chocolate should I use for dipping strawberries?

Any kind of chocolate can be used for dipping strawberries. You can use dark, white or milk chocolate. Semisweet or bittersweet in chip form are preferred by few because it is easier to melt. Others add shortening or butter to aid melting smoothly and solidify during cooling.

For a wonderful shine and best result, good quality chocolate, such as couverture chocolate, can be used. But you should be cautious because this contains 32% cocoa butter and can be quite tricky to work with. It may get you to have one or two attempts to get it correctly. You may start practicing with a small quantity first until you get it right.
